Ballybeg Greens began with an idea to utilise a space that had been unused and dilapidated for many years. Having developed the Horticulture Initiative which provides training to students through a community development project, a new idea sprang from conversations with local restaurateurs.

To see if this idea was sustainable, we observed the food growth market for a 12 month period. Here, we spotted a niche for premium quality, organically grown salad leaves, specialist vegetables, herbs and edible flowers.

Ballybeg Greens was officially formed in 2011 to and to date we have a wonderful working partnership with restaurateurs and chefs in Waterford City & County.
